My Winning Story - Superchef Chennai 2nd Runner Up.

What a blessed start, month of February showered me with abundant blessings.
In the past, I have been recognized and rewarded as creative expert, as a jewelry designer and I was longing to be recognized as a renowned chef and that magic happened on Feb 2nd and 3rd of 2013.
Madras Cosmopolitan Ladies Circle 38 conducted a two day, first of its kind high-end live cooking competition and I bagged 2nd runner up in the appetizer category.
More than being in top 3, I was honored to meet and receive award from renowned Chef Padma Shri Tarla Dalal and from NDTV fame Chef Vicky Ratnani.

For the pre-cooked preliminary round I prepared a Japanese inspired American recipe "Honey Shichimi Togarashi Chicken Wings". And for the next day ultimate 'live' (yes!, it was 'live' like Iron chef, Master Chef Australia and other popular shows on TV) cook-off the 12 finalists were given 3 secret ingredients in a mystery box and had to cook an appetizer using any of the 2 secret ingredients on the spot in 70 mins.
The secret ingredients in my mystery box were chicken, shrimp and olives, as soon as the mystery box was revealed I decided to make my favorite Mexican Cuisine with shrimps and olives. I prepared "Shrimps and Olives Fajitas over mini Tortillas with Pineapple Salsa".
The renowned chefs judged the dishes on the criteria of Creativity, Complexity, Presentation and Taste.

Since Tarla Dalal madam being vegetarian she didn't taste my dish but she was so pleased with my food presentation and she congratulated me saying it was excellent presentation with lots of creativity than other 12 dishes.

Chef Vicky Ratnani and other Chefs appreciated the taste of food and my effort on preparing all the ingredients including fajita seasoning, tortillas and pineapple salsa from the scratch within 60 mins.
MCLC-38 arranged for a stupendous award function and dinner in the evening, I was honored to receive the 2nd runner-up award by Padma Shri Tarla Dalal with prizes worth of Rs 15000 and lots of other gift hampers.

I, Thank MCLC-38 for conducting such a high-end, first of its kind cooking competition in Chennai and bestowing me with award from India's renowned chefs and valuable prizes.
My dream had come true and I know this is not the end there are lots to achieve and lots to learn.

Savoury Cornmeal Crumble with Butternut Squash, Spinach and Feta
I love fall season and I love its beautiful colours. So I thought of sharing wonderful butternut squash recipe from Ivy Liacopoulou of Kopiaste.

Preparation time: 30 minutes
Baking time: 1 hour
Serves: 1 baking dish (about 12 pieces)
Ingredients:
Filling:
- 2 lbs butternut Squash, grated
- 1 lbs spinach, squeezed
- ½ cup olive oil
- 2 eggs
- 1 lbs feta, crumbled
- ½ cup parsley, finely chopped
- ½ cup fennel fronds, finely chopped
- Salt (with caution) and freshly grated black pepper
- A pinch of cumin
Crumble:
- 1.5 lbs corn meal
- 1 cup extra virgin olive oil
- 200 ml Greek yogurt 2%
- 4 eggs
- 1 tbsp salt
Additional ingredients:
- 3 tbsp margarine divided (to grease the baking tin and to add on top)
Directions:
- Grate the pumpkin and mix all the filling ingredients.
- In a large bowl add the crumble ingredients and mix using your hand until the ingredients are well blended to form the crumble. If you still see corn meal, add more olive oil, if necessary.
- Grease a 35 x 25 cm baking tin with 2 tbsp margarine. Add half of the crumble on the baking tin.
- Add the filling on top and sprinkle the remaining crumble on top of the filling.
- Add the remaining margarine in small pieces scattered all over the baking tin.
- Preheat oven to 180o C / 350o F and bake for about 1 hour or until the crumble is golden on top.
Serve as a main dish, a side dish or a snack.

My Cooking Show" Enga Veetu Samayal" for Captain TV
Hello Friends, I know I haven't updated any recipes lately, I'm very delighted to share some good news with you. I was doing couple of Cookery shows for Tamil TV channels. Tips on how to make perfect Biryani.

Following the below tips will help you to make delicious fail- safe Biryani.
1. Always use first quality Basmati rice( I use India Gate Classic Basmati Rice for my recipes).
2. Try to use fresh cut chicken/ mutton, avoid freezer or frozen chicken/ mutton.
( People living abroad get your meat from local Indian stores or local stores or farmers market than the supermarkets).

3. For 1 cup of Basmati rice always use 1 and 1/2 cups of water.
4. For 1 kg rice use 1 kg chicken or mutton.
5. For 1 cup of rice use 1 onion, 1 tomato, 2 green chilli, 3 garlic cloves and 1/2" ginger.
6. For 1 cup of rice use 1/2" cinnamon, 1 bay leaf, 2 cloves and 2 green cardamoms.( using of star anise, javitri and mace is optional).
7.For 1 cup of rice use 1 cup of chopped mint and 1/2 cup of chopped coriander leaves.
8.Use 1/4 cup ghee or vegetable oil for preparing 1 kg biryani.
9. Enrich taste of biryani by adding coconut milk( adjust water accordingly).
(These above tips is suitable for making pressure cooker style biryani and not dum style.)

Bye Bye North Carolina and Hello Minessota.

Hello friends, i had a great B'day blast.
Thanks a lot for the b'day wishes. I was overwhelmed with all your wishes, thank you for making this day very special to me.
Time for a short break.
Right now i'm on my vacation to Florida.
Once back, we are moving from North Carolina to our new home at Minnesota.
I'm so eager to explore my new home and neighborhood, hope to get settled soon without much hassle.
Bye Bye to my North Carolina buddies and Hello to my new buddies at Minnesota.
