Roti Halwa/ Double Roti Ka Halwa/ Bread Halwa


Double Roti Ka Halwa/ Roti Halwa
Ingredients
Medium bread slice packet/ Loaf of bread sliced- 1 no
Whole milk- 1 liter
Condensed milk- 1 cup
Sugar- 1 cup( add or reduce amount to taste)
Ghee- 1/4 cup
Elaichi/ Green Cardamom powder- 1/4 tsp
Fried cashewnuts- handful

Bread Halwa
Method
Toast the bread slices in oven until crunchy and lightly browned.
Powder toasted bread slices like bread crumbs in a mixer grinder or blender.
Boil milk in a sauce pan, add sugar and stir the milk till the sugar is completely dissolved. Add condensed milk and elaichi powder to the boiling milk. Stir milk well, now add powder bread, mix well so no lumps are formed and cook the bread in milk mixture on low heat. When the milk is fully absorbed by the bread and the bread mixture is semi dry, add the ghee to the bread mixture. Cook till the ghee seprates from the bread halwa and garnish with fried cashew nuts.

Note: to make the process simple you can also use powdered rusk slices or bread crumbs instead of bread loaf.

Guacamole recipe( How to make Mexican Guacamole at home)


Guacamole Picado
Guacamole Picado is a famous Mexican dip or a side served with tortilla chips or with any main course. Guacamole Picado is made with Avocados( called as butter fruit in India), onions, tomato and garlic etc. Picado means chopped in Spanish, here the ingredients are chopped finely, mixed and served. Here goes the simple and home made recipe of Guacamole

Ingredients
Onion small finely chopped- 1 no
Green chilies finely chopped- 3 nos( you can use 2 Serrano peppers and 1 Jalapeno)
Tomato medium remove seed and finely chopped- 1 no
Garlic clove minced- 1 no
Fresh coriander leaves chopped- 1 tbsp
Avocado ripe- 3 nos
Salt- 1/2 tsp
lime juice from 1/2 fruit
Home-made Guacamole
Method
Remove the seed and scoop out the flesh from the avocados, chop coarsely and place it in a bowl. Add chopped onion, chopped tomatoes, chopped green chilies, minced garlic, chopped coriander leaves, lime juice and salt to the avocados. Mix well everything in the bowl with a fork until avocados are mashed and well blended with other ingredients. Serve with warm tortillas or with tortilla chips.

( Note: for Desi touch I spread Guacamole on dosa, bread slice and chapati which tasted very good).

Masala Vada/ Paruppu Masal Vadai


Masala Vada
Ingredients
Bengal Gram/ Kadalai Paruppu/ Split chick peas-1cup
Rice flour-2 tbsp
Onion medium finely sliced-1
Curry leaves-few( roughly chopped)
Pudina/ Mint leaves-few( roughly chopped)
Salt to taste
Turmeric powder-1/4tsp
Cooking/ baking soda-less than 1/4tsp
Oil required

Ingredients for masala( grind coarsely)
Ginger-1/2" inch
Garlic-5 cloves
Whole dry red chilies-6 nos
Aniseed/ Sombu-1 tsp

Masal Vadai
Method
Wash and soak the bengal gram for 1 hour and grind it coarsely. 
In a bowl add the finely sliced onions, mint leaves, curry leaves, ground masala, turmeric powder, cooking soda, required salt and 2 tsp of oil. The onion mixture should be mixed well with the fingers. Now add the coarsely ground bengal gram and rice flour to the onion mixture and again mix well so the bengal gram and onion mixture is well blended. Heat enough oil in a pan to deep fry, when oil is hot, divide the bengal gram vada mixture into equal sized balls. Flatten each ball between the palm and slide it into the hot oil, you can add upto maximum of five vadas at a time, depending on the size of the pan. Cook the vadas on medium heat, until golden brown in color( Masal vadas has to be crisp and crunchy outside and soft and well cooked inside). Once the vadas are done drain from the oil and transfer to paper towel. Serve hot with Chutney.
