Soya Chunks Fried Rice / Meal Maker Recipes

Meal maker Fried Rice
Ingredients
Soya Chunks – 20 nos ( I used tiny varieties around 1 cup )
Basmati rice cooked – 2 cups
Carrot small chopped finely – 1 no
Beans finely chopped – 4 nos
Spring onion – 5 stalks ( both green and whites chopped )
White pepper powder and Salt to taste
Ajinomoto – ¼ pinch
Oil – 2 tbsp + 1 tbsp

Ingredients to marinade soya chunks
Red chili powder – ½ tsp
Ginger and garlic paste – ½ tsp
Soy sauce – ½ tsp
Salt – less than ¼ tsp
Corn flour – 1 tsp
Water – 1 tsp ( optional)
Soya Chunks Fried Rice
Method
  1. Boil soya chunks in salted water, drain and squeeze excess water from soya chunks.
  2. In a bowl add the ingredients given under soya chunks marinade and mix to smooth paste. Add the cooked soya chunks to this paste and mix gently. Set aside for 5 mins.
  3. Boil basmati rice in salted water until its cooked and grains are firm. Spread the cooked rice on a large plate and allow it to cool.
  4. Heat 1 tbsp oil in a pan, add the marinated soya chunks and stir fry until they are slightly crisp. Remove the fried soya chunks to a plate.
  5. In the same pan heat 2 tbsp oil, add the chopped carrot, beans, spring onion whites and fried soya chunks, stir fry on high heat for a minute. Add the cooked rice to the pan, season with ajinomoto, required salt and white pepper, stir fry again for 2 minutes.
  6. Finally garnish with spring onion greens and mix well.
  7. Serve hot soya chunks fried rice with sidedish of your choice.

Soya Chunks Pulao/ Meal maker Pulao


Learn how to make Soya Chunks Pulao in easy method
Soya Chunks Pulao
Ingredients
Basmati rice- 2 cups
Soya chunks/ Meal maker nuggets- 20 to 30 nos
Onion medium thinly sliced- 2 nos
Tomato small chopped- 2 nos
Green chilly broken- 5 nos( +/- to taste)
Ginger and Garlic paste- 1 tbsp
Coriander leaves- 1/4 bunch
Mint leaves- 1 bunch
Garam Masala powder- 2 tsp
Salt to taste
Ghee/ Butter- 2 tbsp

For tempering
Cinnamon- 1" stick
Cloves- 4 nos
Cardamom- 4 nos
Bay leaf- 2 nos
Cumin seeds- 1 tsp
Oil- 4 tbsp.
Meal maker pulao
Method
Wash and soak basmati rice in 4 cups water for few minutes.
Heat 2 tbsp ghee in a pan, add drained rice and fry rice in ghee on low heat until slightly browned, turn off heat and set aside.
Soak Soya chunks in hot water for 5 mins or until Soya chunks are soft, squeeze excess water from soya chunks and set aside.
Heat oil in a pan when hot add tempering whole spices, fry until aroma rises. Add sliced onion, broken green chillis and fry until slightly browned.
 Now add ginger and garlic paste and fry until raw smell leaves. Next add chopped mint and corinader leaves( reserve some to garnish), Soya chunks and chopped tomatoes. Saute for few seconds and add garam Masala powder. 
Pour 4 cups of water in which basmati rice was soaked to the pan, stir well and bring to boil. When water starts boiling add required salt and ghee fried basmati rice. 
Stir well on medium heat until 1/4th of the water is absorbed by rice. Now cover pan with tight lid and cook pulao on low heat for 10 mins or until rice is cooked and tender. 
Finally garnish with rest of mint and coriander leaves and serve hot Soya chunks pulao with your favorite mushroom korma or paneer tikka masala or mushroom masala.

Mealmaker Fry/ Soya Chunks Varuval

Mealmaker fry
Ingredients
Soya Chunks/ Mealmaker-20 nos
Ginger and Garlic paste-1 tsp
Red chilli powder-1 tsp
Cumin powder-1/2 tsp
Fennel seed/ Sombu powder-1 tsp
Black pepper powder-1/2 tsp
Salt to taste
Curry leaves few
Oil-2 tbsp
Soya Chunks fry
Method
Bring water to boil in a pan, add the soya chunks to the boiling water, cook for a
minute and drain from water, squeeze excess water from the soya chunks and set aside. In a bowl combine ginger and garlic paste, red chilli powder, cumin powder, fennel powder, black pepper powder and salt. Add 1 tsp water if required and mix well. Add the cooked soya chunks to this masala paste, mix well and marinate the soya chunks for 10 mins. Heat oil in kadai, when hot add curry leaves and marinated soya chunks, fry for couple of minutes in medium heat until the soya chunks are dry and roasted.

Simple version of mealmaker fry

Instead of all the spice powder use 2 tbsp everest meat masala or chicken masala powder and prepare the soya chunks following the same above method.

Chettinad Soya Chunks Curry/ Meal Maker Kurma Recipe



Soya Chunks Curry
Ingredients

Soya chunks/ Meal maker- 20 nos

Onion medium finely chopped- 1 no

Tomato medium finely chopped- 1 no
Ginger and Garlic paste- 1 tbsp
Curry leaves- few
Turmeric powder- 1/4 tsp
Pepper powder- 1 tsp
Salt to taste
Oil- 4 tbsp
Cinnamon- 1"
Cloves- 4 nos
Green cardamom- 2 nos
Red Chilli-2 nos



Masala to grind

Coconut shredded- 1/4 cup

Poppy seeds /Kuskus- 1 tsp
Fennel seeds- 2 tsp
Jeera- 1 tsp
Pepper corns- 8

Meal Maker Kurma Recipe

Method

Grind the masala ingredients to smooth and fine paste adding little water.

Cook soy chunks as per box carton instructions, squeeze excess water from soy chunks and set aside. Heat oil in a pan when hot add cinnamon, cardamom and cloves and fry till aroma rises. Add chopped onions and ginger- garlic paste, fry for few mins until raw smell of paste leaves and onions are browned. Add curry leaves and tomatoes and cook till tomatoes are mashed. Add turmeric powder, pepper powder, ground masala paste and salt. Fry paste until oil separates on the sides. Add required water to the frying masala paste to get required gravy consistency. Add soy chunks and cook for another 5 mins. Garnish with coriander leaves and serve with idli, Appam, Idiyappam and Chapati.

Mealmaker Pakora/ Soy Pakoda.


Meal maker pakoda

Ingredients
Soya chunks/ Meal maker- 2 cups
Ginger and Garlic paste- 1 tbsp
Red chilli powder- 1 1/2 tsp
Garam masala powder- 1 tsp
Lime juice- 1 tsp
Cornflour- 3 tbsp
All purpose flour/ Maida flour- 3 tbsp
Red food color- few pinches
Water required
Salt to taste

Soy Pakora
Method
Soak soy chunks in hot water for couple of minutes, when they become soft drain them from water, squeeze soy chunks and set aside.
In a medium sized bowl add ginger and garlic paste, red chilli powder, Garam masala, lime juice, cornflour, all purpose flour, red food color and required salt.
Make a smooth paste out of above masala mixture by adding very little water.
Add the soy chunks to this masala paste and mix well until the masalas are well coated on the soy chunks.
Now heat enough oil in a pan to deep fry, when the oil is smoking hot, drop the masala coated soy chunks carefully into the hot oil.
Fry the soy chunks until golden brown in color and crisp, drain the soy chunks on a paper towel and serve hot with mint chutney and tomato ketchup.

Chilli Soya Chunks/ Chilly Mealmaker.


Ingredients
Soy nuggets/ Meal maker( uncooked)-2cups
Onion large( minced)-1
Tomato small( finely chopped)-1
Green chilli( minced)-1
Garlic cloves( minced)-2
Ginger( minced)-1/2"inch
Ginger and Garlic paste-1tsp
Kashmiri red chilli powder/ normal red chilli powder-1tsp
Salt to taste
Cornflour-1tbsp( mix with 4tbsp water)
Oil required


Method
Boil water in a large pan, add salt, when the water starts boiling add the soy nuggets and turn of the heat. Keep the nuggets in boiling water for 5 mins until the nuggets soften and drain the soy nuggets. Allow the soy nuggets to cool, squeeze excess water from the soy nuggets and set aside.
Heat 2tbsp oil in a sauce pan, when hot add the minced onion, green chilli, ginger and garlic saute for 2 mins. Next add the ginger and garlic paste and saute for 2 mins. Now add the chopped tomato and cook till the tomato is done and mashed. Add kashmiri chilli powder, salt, cooked soy nuggets and saute for few more mins. Sprinkle 1/4 cup water on the nuggets and bring the gravy to boil, when the gravy starts boiling add the cornflour paste and reduce the heat. Stir well and cook until the gravy thickens. Serve hot with Fried rice, Noodles or Chappati.

Vegetable and Mealmaker( Soya Chunks) Biryani.


Ingredients
Basmati Rice- 2cups
Onion medium chopped- 2
Tomato medium chopped- 2
Soy chunks( cooked)- 2cups
Carrot diced- 1
Green Beans chopped- 1/4cup
Coriander leaves- 1/2cup
Mint leaves- 1/2cup
Ginger and Garlic paste- 1tbsp
Beaten Curd- 1/4cup
Red chili powder- 2tsp( +/-)
Fennel powder- 1/2tsp
Coriander powder- 2tsp
Turmeric powder- 1/2tsp
Salt to taste 

For tempering
Oil required
Cloves- 6
Cinnamon- 2"
Cardamon- 2
Bay leaves- 2
Javitri( Mace)- few
Star anise- 1

Method
In a large bowl add the curd, red chili powder, fennel powder, coriander powder, turmeric powder and salt. To this mixture add soy chunks, carrot, green beans and tomatoes. Let the vegtables marinande for 1/2 hour, meanwhile soak basmati rice in water for 20 mins. Heat oil in a rice cooker, when hot add the whole spices and fry till the aroma rises. Now add the onions, saute for few mins and add the ginger and garlic paste and fry till the raw smell leaves. Add the marinaded vegetables to the onions and fry 5 mins. Season with salt and add the mint and coriander leaves. Check amount of gravy in the rice cooker and depending on that measure water for the rice. Add the measured water to the vegetable and bring the mixture to boil. When the gravy boils check the seasoning and add the soaked and drained rice. Cover the cooker with lid and cook the rice until soft and tender. Serve hot with gravy or raita of your choice.

Soya Butter Masala( Soy Bean in Indian Masala).



Soybeans are considered to be a source of complete protein. A complete protein is one that contains significant amounts of all the essential amino acids that must be provided to the human body because of the body's inability to synthesize them. For this reason, soy is a good source of protein, amongst many others, for vegetarians and vegans-Wikipedia. Lets have soy in our meal as simple recipes.

Ingredients
Soy beans (soaked overnight and cooked)-1cup
Onions big chopped-1
Crushed tomatoes-2cups
Ginger and Garlic paste-1tsp
Cumin seeds-1tsp
Cumin powder-1tsp
Coriander powder-2tsp
Garam masala-1tsp
Kashmiri Chilly powder-1tsp
Kasoori methi-1tsp (optional)
Salt to taste
Butter-50gms
Cardamon-1
Cloves-2

Method
Heat butter in pan, when melts add cardamon, cloves and cumin seeds. Now add the onions and ginger-garlic paste saute until raw smell of ginger-garlic leaves. Next add cumin, coriander, chilly powders, garam masala, kasoori methi and salt. Fry this masalas for a min and add the soy beans and crushed tomatoes. Add little water and cover with lid and simmer, allow to cook for 7mins. Uncover, increase flame and cook until butter floats on top. Serve hot with Nan or Pulao.
