Ginger-Egg Fried Rice( Indo-Chinese style).





The unique flavour of ginger makes this recipe mouth-watering and helpful for digestion.
Ingredients
Cooked Rice-2cups
Eggs beaten-4
Minced Ginger-4tbsp
Minced Onion-2tbsp
Green chilly slit-2
Soy sauce-1tbsp
Pepper and salt to taste
Oil required

Method
Heat oil in a pan add beaten eggs, season with pepper and salt, scramble it and set aside. Next heat oil in the same pan add the ginger and fry till brown and crisp, now add the minced onion and green chilly saute for a min. Add the cooked rice and scramble eggs, season with soy sauce, salt and pepper. Mix well and serve hot.

Soya Butter Masala( Soy Bean in Indian Masala).



Soybeans are considered to be a source of complete protein. A complete protein is one that contains significant amounts of all the essential amino acids that must be provided to the human body because of the body's inability to synthesize them. For this reason, soy is a good source of protein, amongst many others, for vegetarians and vegans-Wikipedia. Lets have soy in our meal as simple recipes.

Ingredients
Soy beans (soaked overnight and cooked)-1cup
Onions big chopped-1
Crushed tomatoes-2cups
Ginger and Garlic paste-1tsp
Cumin seeds-1tsp
Cumin powder-1tsp
Coriander powder-2tsp
Garam masala-1tsp
Kashmiri Chilly powder-1tsp
Kasoori methi-1tsp (optional)
Salt to taste
Butter-50gms
Cardamon-1
Cloves-2

Method
Heat butter in pan, when melts add cardamon, cloves and cumin seeds. Now add the onions and ginger-garlic paste saute until raw smell of ginger-garlic leaves. Next add cumin, coriander, chilly powders, garam masala, kasoori methi and salt. Fry this masalas for a min and add the soy beans and crushed tomatoes. Add little water and cover with lid and simmer, allow to cook for 7mins. Uncover, increase flame and cook until butter floats on top. Serve hot with Nan or Pulao.

Onion Rings



Ingredients




Onions big-2

All purpose flour/Maida flour-1cup
Corn flour-1tbsp
Baking powder/soda-pinch
Bread crumbs-1/2cup
Egg-1
Milk cold required
Pepper and Salt to taste

Method
Cut Onions into thick rounds. Separate each rounds into rings. In a bowl, combine all purpose flour, cornflour, breadcrumbs, pepper, salt and baking powder. Whisk together egg and milk. Add milk mixture to dry ingredients, blend well. Dip onion rings into batter, then deep fry in hot oil. Fry until golden brown, drain and set aside on paper towel for few seconds. Serve hot with sauce of your choice. Your Kids and Family will love it.

Era Thokku/ Onion and Prawn fry.


This an authenticate southindian spicy prawn recipe, its often done at my home, goes very well with Rice or Dosa.





Ingredients
Deveined Prawns/Shrimps-400gm
Onion big chopped-2
Tomato small chopped-1
Curry leaves powder-1tsp
Chilly powder-1 1/2tsp
Pepper powder-1tsp
Turmeric powder-1/2tsp
Coriander powder-1tsp
Salt to taste
Sesame Oil required

Method
Heat oil in a wok, when hot add onions, ginger-garlic paste and fry for while, once the raw smell of ginger-garlic leaves add the prawns. Cook until prawns turn pink, now add the tomatoes and other ingredients and fry for few more mins, add little water and cook until the mixture is dry and oil floats on top. Serve hot with Rice or Dosa.

Home-Made Paratha.




Now a days frozen parathas are getting very popular but i guarantee that nothing is as fresh as and better in taste than Home-made Parathas. Making parathas at home is very simple and i would like to share this recipe with everyone.


Ingredients
All purpose flour/Maidaflour-3cups
Egg-1
Sugar-2tsp
Salt to taste
Milk and water required
Oil-1cup

Method
Take a big bowl and put all purpose flour, sugar and salt. Mix well, add beaten egg and 1/2 cup oil to the dry mixture, add water and milk little by little until you make a soft dough. Adequately apply oil on top of the dough and cover it with wet cloth and rest it for 2 hours or until it doubles in its size. After 2 hours take small amount of doughs and make it rounds. Roll into thin sheets with rolling pin, hold one sheet lift with two hands and swirl and lift it in the air and hit on the top of the table. Till the sheet becomes bigger, lift the sheet and fold it in fan folding method( like making pleats for clothes) and gather pleats. Take one end of gathered pleat, in circle motion make it flat round. Now roll this flat round to bigger circles as doing for chapatis. Heat the Tawa sprinkle oil on top. Place the rolled paratha on the tawa. Cook on both sides till golden brown. Place four to five cooked parathas on a plate hit its sides nicely with both the hands and you can see the layers in it. Serve Hot with any curry of your choice.

Rava Adai/ Sooji Snack




Unexpected guests or sudden hunger? This is an right instant crispy snack which can be prepared in 10 mins. Can be given as kids lunch box menu.



Ingredients
Roasted Rawa/ Semolina-2cups
Dry red chilly-3
Mustard seeds-1tsp
Jeera seeds-1/2tsp
Urad dhal-1tbsp
Channa dhal-1tbsp
Turmeric powder
Water-3,1/2cups
Oil required
Salt to taste

Method
Take a deep pan add oil, when hot add the mustard and jeera seeds allow to crackle and add the red chillies, urad dal, channa dal roast till brown. Add water to tempering and bring to boil, when boiling add turmeric powder, salt and roasted rawa/semolina. Keep mixing continuously so that no lumps are formed. Cook till the rawa/semolina has absorbed water completely, turn of flame and allow this mixture to cool. Once this mixture is cool down make small balls out of this rawa/semolina mixture flatten between your palms to make thin adai/patties. Heat tawa, place four to five adai/patties on the tawa and smear 1tsp of oil around the adai/patties and cook till golden brown on both sides till crisp. Serve hot with Coconut chutney or Sauce of your choice.

Udon Noodles Soup and Chicken Tempura




This is an Japanese dish which is really tasty and easy to prepare. Udon is hot noodle soup in a mildly flavoured broth.





Ingredients
Udon frozen noodles (cooked)-2cups

Chicken boneless (cubed)-200gm
Water-3cups
Granulated dashi-1tsp or Chicken broth cube-1
Soysauce-2tsp
Hon mirin-1tbsp or Rice wine-1tbsp
Salt and Pepper to taste
Spring onions greens (chopped)-2tbsp
Tempura Batter-Cold water, All purpose flour-1/2cup, Egg-1, Baking soda or Baking powder-pinch, Corn starch-3tbsp, Oil-1tsp, Pepper and Salt.

Method
Dip the chicken pieces in tempura batter and deep fry in hot oil till golden brown. Set aside. Take a deep cooking vessel add the Water, chicken broth cube, hon mirin and soy sauce. Mix well. Bring this mixture to boil, when it starts boiling add the cooked noodles and spring onion greens, season with salt and pepper. Simmer for 2 mins, turn of the flame and add the chicken tempura to the noodles. Serve hot.

Garlic Fish and Capsicum Rice


Fish cooked in very good garlic flavour and served with aromatic Capsicum rice. A perfect Dinner.





Garlic Fish Ingredients
Tilapia (Boneless) sliced-200gms
Garlic cloves minced-8
Lime juice-1tsp
Salt to taste
Cayenne pepper/ Chilly powder-1tsp
Breader mix-1cup
Oil required.

Garlic Fish Method
Marinade the fish slices with lime juice, cayenne pepper and salt for 2 hours. Next rub both sides of marinated fish slices in the breader mix well, so the mix is well coated. Heat enough oil in tawa add the minced garlic and saute for less than a minute (garlic should not be browned) place the fish slices on the same tawa with garlic and cook till crisp on both slices.

Capsicum Rice Ingredients
Basmati or Jasmine Rice (cooked)-2cups
Capsicum large sliced-1
Onion medium sliced-1
Ajinomoto or Msg-pinch
Salt and Pepper to taste
Oil required

Capsicum Rice Method
Heat oil in a wok, add the onions and capsicum. stir fry and do not over cook. Season with ajinomoto, salt and pepper. Add the cooked rice and mix it well. Serve hot with Garlic Fish and Ketchup.

Wheat Dosa/ Gothumai Dosai



Simple and easy breakfast, can be done in 5mins.

Ingredients
Wheat flour-2cups
Onion big finely chopped-1
Chilly powder-1tsp
Mustard seeds-1tsp
Salt to taste
Oil required

Method
Heat 1tsp of oil in a pan add the mustard seeds, when crackels add the onions and saute for 1min. Set aside.In a deep bowl combine wheat flour, sauted onions, chilly powder, salt and enough water to make a smooth batter. Heat tawa, smear 1 teaspoon oil on the tawa, when hot pour a ladle full of batter in the center of the tawa and spread to make a circle the whole tawa, spread 1 teaspoon oil on the dosa. Cook on both sides and remove to plate. Serve hot with Coconut chutney.

This is an typical Indian snack, very special to everyone.




Ingredients
Bajji Chilly(Anaheim pepper) big-2
Potato big (boiled and mashed)-1
Onion small (chopped)-1
Besan (Gram flour)-1cup
Maida (All purpose flour)-1/2cup
Chilly powder-3tsp
Turmeric powder-1tsp
Garam masala-1tsp
Amchoor (dry mango) powder-1/2tsp
Salt to taste



Method for Chilly Bajji (Anaheim pepper fritters)



1.For the Stuffing-in a small bowl mix the mashed potato with onion, 1tsp of chilly powder, 1/2tsp turmeric powder, 1tsp of garam masala, 1/2tsp of amchoor powder and salt. Set aside. 
2.For the Batter-in a deep bowl mix gram flour, maida flour, 2tsp chilly powder, 1/2tsp of turmeric, salt and enough water to make thick batter.
3.Slit the Chilly (peppers) keeping the tail end intact, stuff the potato
mixture inside the chilly. Dip the stuffed chilly in the batter well so that the batter is well coated on the chilly and deep fry in hot oil till golden brown. Drain from oil and serve hot with Mint chutney.



Method for Potato Bonda (Potato fritters)



Follow the 1 and 2 step given for chilly bajji (avoid the chilly).

3.Make small balls out of potato mixture, dip these potato balls in the prepared batter, make sure that the batter is well coated on the potato balls.
4.Deep fry these battered potato balls in hot oil till golden brown. Serve hot with Coconut chutney.

Macaroni recipe with Lima Beans





Ingredients



Cooked Macaroni-2cups (cook macaroni with little salt and butter)

Lima Beans-1cup
Crushed Tomato-2cups
Onion medium(chopped)-2
Garlic cloves(minced)-4
Green chilly (minced)-1
Oregano-1tsp
Bay leaf-1
Pepper-2tsp
Salt to taste
Butter-1tbsp(optional)
Oil required

Method
Heat oil in a pan, saute the onions, garlic and green chillies. Add the lima beans and bay leaf stir fry for 5mins. Add the crushed tomatoes and season with oregano, pepper and salt. Add little water, bring to boil and cover with lid for 5 mins. When the mixture becomes thick add butter and turn of the flame. While serving place the macaroni on a plate and top up with Lima sauce. Serve Hot.

Pepper Vegetable fry.


Sometimes my husband cooks for me and this is one of his tastier preparation. Its so simple to prepare but i was astonished by the taste. When you go on eating spicy and cheesy foods take a break for fresh vegetables seasoned with salt and pepper.





Ingredients


Carrots (chopped lengthwise)-1cup
French beans (chopped lengthwise)-2cups
Peas-1cup
Broccoli (tiny florets and stems)-1/2cup
Cauliflower (tiny florets and stems)-1/2cup
Onion medium (thinly sliced)-1
Olive oil-1tsp
Salt and Pepper to taste



Method


Heat oil in a wok add all the vegetables one by one and stif fry for 5 mins. Do not over cook the vegetables they should be crunchier. Season with salt and pepper, serve hot with toasted Bread or Chappati or Tortillas or Rice goes well with anything.

Semiya Bagala Bath/ Curd Semiya.


This is a great recipe for summer, it keeps you cool throughout the day. It is oil less and nutritious.

Ingredients
Roasted Vermicelli/ Semiya-1cup
Water-1cup
Yogurt-2cups
Red grapes-1/2cup
Cucumber finely chopped-1/2cup
Pineapple finely chopped-1/2cup
Carrot shredded-1/2cup
Coriander leaves-4tbsp
Sugar-1tsp (optional)
Salt to taste

Method
Bring one cup of water to boil, add the roasted Vermicelli and cook until done. When cooked set aside and allow to cool. In a big bowl add the yogurt and beat well. To the yogurt add the chopped cucumber, pineapple, carrot and red grapes. Mix well, add sugar and required salt. Finally add the cooked Vermicelli and coriander leaves, mix well. Refrigerate before serving.

Pav Bhaji.





Pav bhaji is a fast food dish native to Maharashtrians particularly in the Maharashtrian city of Mumbai & Pune. Its simple and easy to prepare yet very tasty.



Ingredients
Pav-4 (Pav (bread) to be roasted with an ample amount of butter
Potatoes big finely chopped-3
Peas-1/2cup
Onion big finely chopped-1
Tomatoes medium finely chopped-2
Ginger and garlic paste-1tsp
Chilly powder-1tsp
Salt to taste
Lime juice-1tsp
Butter-3tbsp

Roast and finely grind to powder
Shahi Jeera-1tsp
Coriander seeds-1tbsp
Dry red chilly-2
Dry mango powder-1tsp
Cinnamon-1/2"
Black Cardamon-1
Fennel seeds-1tsp

Heat butter in a pressure pan, add onions, potatoes, peas, ginger and garlic paste, tomatoes, chilly powder, turmeric and enough water. Pressure cook until potatoes are done. Add the ground masala to cooked potatoes and season with salt. Mash the potatoes with a laddle, simmer for 5mins until the mixture thickens and butter floats on top. Serve Hot with Pav.

Egg Biryani/ Muttai Biryani.





This is one of my favourite Egg recipe. Its an ideal biryani for eggetarians.




Ingredients

Basmati or Zeera Samba rice (3/4th cooked)-3cups
Eggs (hard boiled and DE-shelled)-4
Peas-1/4cup (optional)
Onions medium (chopped)-2
Tomato big (crushed)-1
Ginger and Garlic paste-2tsp
Green chilly slit-2
Yogurt-1/4cup
Turmeric powder-1/4tsp
Chilly powder-1tsp
Aniseed powder-1tsp
Coriander powder-1tsp
Salt to taste
Cinnamon-1"
Cardamon-2
Cloves-2
Bay leaf small-1
Coriander leaves and Mint leaves (chopped)-1/4cup
Oil required

Method
Heat oil in a deep bottom pan, when hot add the whole gram masala and fry until aroma comes. Next add the onions and green chilly saute until onion turn pink in colour, then add the ginger and garlic paste, fry for few minutes and add the peas. Add the crushed tomato and yogurt. Next season with chilly powder, turmeric powder, aniseed powder, coriander powder and salt. Add the chopped mint and coriander leaves and 1/4cup of water. Allow to boil, add the hard boiled eggs to the gravy, cover with a lid and simmer for 5mins. When the gravy is little thick and oil floats on top set aside the eggs. Mix the cooked rice to the gravy well and cook in 'dum' for 5mins. Halve the eggs and serve along with Hot biryani.

Leftover Rice Pulao





This receipe is the best use of leftover rice. I made this receipe with leftover rice , my husband loved it for his lunch :) So this is an Idle lunch box menu




Ingredients
Cooked Rice/leftover rice - 1 cup
Carrot chopped - 1/4 cup
Beans chopped - 1/4 cup
Green Peas - 1/4 cup
Onion small chopped - 1
Jeera - 1/2 tsp
Cinnamon - 1/2 inch
Cardomom - 1
Cloves - 2
Red Chilly Power - 1 tsp
Salt - to taste
Garam Masala - 1/4 tsp
Oil - as required

Method
Heat Oil in a pan. Add Cinnamon, Cardomom and Cloves, fry for a minute. Add Jeera,when crackles add Onions, and fry until they turn pink. Next add the vegetables(Carrot, Beans, Peas), and fry for few mins. Season with Chilly Powder, Salt and Garam Masala. Finally add the cooked rice to the vegetable mixture and mix well. Serve hot (in a lunch box :) ), with any Raitha and Chips.

Kerala Chicken Stew







Kerala on the southern part of India is known for vast amount of coconut trees. Almost in every keralite recipe coconut would be an main ingredient. Keralite recipes are non-spicy at the same time great in taste. This is one of my favourite keralite recipe to have with Rice.


Ingredients
Chicken boneless-500gms
Onion big chopped-1
Tomato big chopped-1
Green Chillies slit-2
Ginger and garlic paste-1tsp
Chilly powder-2tsp
Turmeric powder-1/4tsp
Salt to taste
Thick coconut milk-1cup
Coconut oil/ Any oil-4tbsp
Cinnamon-1"
Cloves-2
Cardamom-1

Method
Heat coconut oil in a wok, add the cinnamon, cloves and cardamom fry till you get the aroma, then add the onions, chicken and green chillies fry till onions turn pink in colour. Add the ginger-garlic paste, cook till the raw smell leaves, now add the tomatoes cook well so the tomatoes get mashed. When the mixture becomes thick add turmeric powder, chilly powder and salt. Add 1 cup of water and allow to boil. Cover the wok with a lid and allow to cook for 10 mins until the chicken is well cooked. Uncover the lid, add thick coconut milk to the chicken gravy and simmer for 2 mins. Serve hot with white rice.

Spaghetti with Indian Minced Chicken



Ingredients




Spaghetti (cooked)-2cups

Minced Chicken-250gms
Onion medium( finely chopped)-1
Tomatoes small( finely chopped)-2
Green chillies( finely chopped)-2
Garlic cloves( sliced)-3
Coriander powder-1tbsp
Pepper powder-1tbsp
Turmeric-1tsp
Salt to taste
Oil required

Method
In a pan heat oil, fry the onions, minced chicken, green chillies, garlic cloves and tomatoes. Cook till tomatoes are mashed. Add coriander powder, turmeric powder, pepper powder, salt and water, Cook until gravy becomes thick. Pour this mixture over cooked pasta and serve hot.
