Indo-Chinese Egg Fried Rice



Ingredients
Jasmine Rice/ Basmati Rice (cooked)-2cups
Eggs (seasoned with pepper and salt and scrambled)-4
Carrot (finely chopped)-1/4cup
Beans (finely chopped)-1/4cup
Garlic cloves (chopped)-2
Soy sauce-1/2tsp
Pepper and Salt to taste


Method
Heat oil in a wok; add garlic, carrot, and beans. Stir fry for a minute. Add the scrambled eggs, cooked rice. Add soy sauce and season with salt and pepper. Serve hot with Chicken Manchurian, Hot and Sour vegetables, etc.

Rava Dosa/ South Indian Sooji Dosa.


A tasty Southindian breakfast almost prepared at every Southindian Home. Its easy to prepare, very crisp and tasty.





Ingredients
Roasted Sooji-1cup
Maida-1/2cup
Butter milk-3cups or Water-3cups
Jeera-3tsp
Coarsely ground pepper-3tsp
Chopped Green chillies-2tsp
Broken roasted Cashews-3tbsp (optional)
Coriander leaves (chopped)-3tbsp (optional)
Salt to taste

Method
In a large bowl add the buttermilk and other above ingredients. Mix well and keep aside for 2 hrs. Heat tawa, smear 1 teaspoon oil on the tawa, when hot pour a ladle full of batter on the sides of tawa the batter runs to the center and fills the whole tawa, spread 1 teaspoon oil on the dosa. Cook on both sides and remove to plate. Serve Hot

Vegetarian Angel Hair Pasta.





Ingredients

Angel hair pasta (cooked)-1cup
Carrot (cut into thin strips)-1
Cabbage(thinly sliced)-1/2cup
Capsicum (thinly sliced)-1/2cup
Broccoli(small florets)-1/4cup
Garlic cloves (minced)-4
Green Chillies (slit)-2
Crushed pepper-1/2tbsp
Soy sauce-1tsp
Ajinomoto-1tsp
Salt to taste
Oil Required

Method
Heat oil in a wok, when hot add the minced garlic and fry for a minute, then add the carrot, cabbage and capsicum and sauté for 2 mins. Add the cooked Angel hair pasta and mix well with vegetables. Now add soy sauce, ajinomoto, and season with crushed pepper and salt. Serve hot with Ketchup and French fries.

Maggi Noodles recipe with Minced Chicken and Peas




Instead of eating the instant noodles plain I would like eating with vegetables and meat. This my innovation, I hope you like it!


Ingredients
Instant noodles (any flavor)-2packets
Minced Chicken-1/2cup
Peas (frozen)-1/2cup
Cumin seeds-1tsp
Red Chilli Powder-1/2tsp
Pepper powder-1/2tsp
Salt to taste

Method
Heat oil in a pan, add cumin seeds and allow crackle and then add the minced chicken fry until chicken is cooked. Now add the peas and fry for 2 mins. Add chilli powder, pepper powder, salt and Taste maker given with the instant noodles. Add water as given in the instant noodles pack. Bring the mixture to boil. Break the instant noodles and add to the boiling mixture, cover for few mins until the noodles are cooked and dry. Serve Hot.

Chilli Parotta/ Chilly Paratha


Yet another simple but tasty recipe, you can use Flour Tortilla or Chapati instead of Parotta. Enjoy!



Ingredients
Parotta/Flour Tortillas-4(cooked and broken into pieces)
Onion medium (sliced)-1
Green chillies (slit)-2
Garlic crushed-2
Turmeric/Red food color
Soy sauce-1tsp
Ajinomoto-1/4tsp
Pepper powder-1tsp
Salt to taste
Oil required

Method
Heat oil in a pan; fry the garlic, onions and green chillies. When onions turns pink add turmeric, soy sauce, ajinomoto, pepper and salt. Add little water to make the mixture saucy, now add the Parotta/ flour tortilla pieces and mix well until all the pieces are coated with the sauce. Serve hot.

Cauliflower Stew



This is a simple recipe with easily available ingredients. Serve hot with steamed rice or Chapati.


Ingredients


Cauliflower small florets-2cups
Onion medium-1 chopped
Garlic cloves crushed-4
Tomato small-1 chopped
Ginger and garlic paste-1tsp
Chilli powder-1tsp/Pepper powder-1tsp
Salt to taste
Coconut thick milk-1/2cup



Method

Heat oil in a pan, add onions and garlic sauté well. Add ginger and garlic paste, cauliflower florets and fry for 5 mins. Add the tomatoes and cook for another 2 mins. Season with chilli powder and salt. Add enough water and allow to boil. When the gravy boils add the coconut milk simmer for 2 mins and serve hot.

Chili Plantain.( Plantain prepared like Chili Gobi or Chili Chicken.)

Ingredients
Plantain-1(peeled and cubed)
Onion medium-1(chopped)
Capsicum medium-1(chopped)
Garlic cloves-6(chopped)
Ginger-1"(chopped)
Soy sauce-1tbsp
GreenChilli sauce-1tbsp
Ajinomoto- pinch
All-purpose flour/Maida flour-2tbsp
Rice flour-2tbsp
Corn flour-2tbsp
Salt and Pepper to taste
Oil required

Take bowl mix all-purpose flour, rice flour, corn flour with salt and pepper; add little water to make a smooth batter. Heat cup of oil in a pan, dip the plantain cubes in the batter and deep fry in hot oil till golden brown. Drain the fried raw bananas and keep aside on a kitchen tissue. Heat little oil in another pan and fry the onions, capsicum, ginger and garlic, season with soy sauce, chilli sauce, ajinomoto, pepper and salt. Sauté for 2 mins and add the fried plantain cubes mix well until all cubes are coated with sauce. Serve Hot with Fried Rice.

Onion Samosa/ Small Samosa.







Filling/ Stuffing ingredients-
Onion medium thinly sliced-1
Minced Ginger and Garlic-1tbsp
For Vegetarian samosa-Soy granules-1/2cup
For Non Vegetarian samosa- Minced meat( cooked with turmeric)-1/2cup
Red Chilli powder-2tsp
Turmeric powder-1/2tsp
Garam masala-1tsp
Salt to taste
Oil required

Outer Wrap ingredients-
Wheat flour-1/2cup
All purpose flour/ Maida-1/2cup
Oil-1tbsp
Salt to taste
Water required

Method
Make smooth dough out of warp ingredients and set aside for hour. Heat oil in a pan add onions and minced ginger and garlic, sauté for two mins. Add the soy granules and cook well. Then add the Red chilli powder, turmeric, garam masala and salt. Cook well till dry, when dry set aside and allow to cool. Make very thin and small chapattis, make cone out of chapatti place the filling and seal, continue this for rest of the chapatti. Heat oil in a pan, when hot fry all the samosas till golden brown. Serve hot with Tomato sauce or Mint chutney.

Spicy Chicken Pizza



Ingredients for Pizza base
1 teaspoon white sugar
1 1/2 cup warm water
1 tablespoon active dry yeast
1 tablespoon olive oil
1 teaspoon salt
2 cups whole wheat flour
1 1/2 cup Maida flour

Ingredients for topping
1 cup shredded mozzarella
3/4 cup shredded Parmesan
1/2 medium red onion, thinly sliced
1/2 cup tomato sauce
1 cup chopped chicken tenders
4 tsp chili flakes
4 tsp oregano
Salt to taste




Method



In a large bowl, mix sugar in warm water. Add yeast and let stand for 15 minutes, until foamy. Now add olive oil and salt into the yeast mixture, then mix in wheat flour and Maida flour to make soft dough. Place dough in a bowl and cover loosely with a towel and let stand in a warm place until doubled in size, about 1 hour. Preheat the oven to 425 degrees F. Roll a ball of dough with a rolling pin until it will not stretch any further. Then, drape it over both of your fists, and gently pull the edges outward, while rotating the crust. When the circle has reached the desired size, place on a well oiled pizza pan. Spread adequate amount of tomato sauce on the top of pizza base, place sliced onions and chicken, sprinkle chili flakes, oregano and salt. Cover the entire pizza with both the cheeses. Bake for 20 to 30 minutes (depending on thickness) in the preheated oven, until the crust is crisp and golden at the edges, and cheese is melted on the top

Crispy Fried Chicken



Ingredients



2 chicken breasts

2 cups bread crumbs
1 egg beaten well
1 cup milk
1 cup maida/all purpose flour
1/4 tsp garlic powder
Dash of paprika
Ground pepper and salt to taste
Vegetable shortening to deep fry

Ingredients for marination
2 tsp onion powder
2 tsp garlic powder
1 tsp salt
Little water

Make a paste out of the marination ingredients, rub thoroughly on the chicken breasts allow to marinate for 4 hours. In a bowl mix egg and milk well. In a separate bowl mix breadcrumbs , maida, garlic powder, paprika, pepper and salt. Dip each piece of chicken into the milk until fully moistened and roll the moistened chicken in the flour mixture until coated. Deep fry in hot oil till Golden Brown.

Chana Masala/ Chole for Poori/ Bhatura.






Ingredients

1 Can- Garbanzo/ Kabuli Chana/ Chickpeas
1/2 cup-( chopped) 
Onions
1/2 cup-( chopped) Tomatoes
2 finely slit- Green chillies
1tsp- Ginger and Garlic paste
1'inch-(  julienned) Ginger
1tbsp- chilli powder
1tbsp- corriander powder
1tsp- jeera powder
1tsp- amchoor powder
1tsp- Garam masala powder
1tsp- lemon juice
Salt to taste
Oil to fry

Method
Heat required oil in a pan add onions, green chillies and ginger. Saute well, add ginger and garlic paste and cook till raw smell leaves, then add the tomatoes and cook until the tomatoes are smashed. Now add chilli powder, jeera powder, coriander powder, amchoor powder and garam masala powder. Cook well and season with salt, now add the cooked Channa and required water and allow to simmer for few minutes. Finally add the lemon juice and garnish with coriander leaves.

Crispy Spring Rolls.

Ingredients




Shredded Cabbage-1cup

Shredded Carrot-1cup
Thinly sliced capsicum-1/2cup
Cooked and Shredded boneless Chicken-1/2cup
Pepper powder-1tsp
Ajinomoto-pinch
Salt to taste
Egg roll wraps-8( if not available in stores, you can make thin chappatis out of maida, egg, salt and water dough)
Oil required

Method
Heat oil in a pan, add the carrots, capsicum, cabbage and chicken saute well. Then add the pepper powder, ajinomoto and salt, cook for just 2 mins. Set aside the vegetable mixture allow to cool for sometime. Take an egg roll sheet place the veg mixture in the center seal all the sides with water so mixture doesn't comes out and make an roll. do the same for rest of the wraps. Heat oil in a kadai when hot deep fry the prepared rolls until golden brown and serve hot with tomato sauce. Instead of chicken cooked prawns can be used. For vegetarian rolls you can avoid shredded chicken.

Onion Pakora/ Vengaya Pakoda.

A very crispy and crunchy snack!






Ingredients:
Rice flour-1cup
Besan flour-1cup
Onion medium-2(thinly sliced)
Greenchilles-3(Finely chopped)\
Minced Ginger and Garlic-2 Tbsp
Curry leaves(chopped)-2 sprigs
Red chilly powder-1tbsp
Salt to taste
Cooking soda- a pinch
Asafoetida- a pinch
Oil- To fry

Method
Take a deep bowl add rice flour, besan flour, red chilly powder, salt, cooking soda and asafetida. Mix well.To the dry powder mixture add onion, green chillies, minced ginger and garlic. Add warm water and mix well. The mixture should be thick.Heat oil in deep kadai, when oil is hot take the mixture in hand and drop it little by little in hot oil.Deep fry till golden brown.

Chettinad Easy Kuzhi Paniyaram


A best less oil snack on a beautiful rainy day



Ingredients:
Finely chopped Onion -1
Finely chopped Green Chillies - 4
Finely chopped Curry and Corinder Leaves - 1 1/2tbsp
Mustard seeds - 3/4tsp
Channa dal-1 tsp
Idly batter-1 cup.

Method:
Heat oil in a kadai, add mustard seeds, channa dal and curry leaves and allow it to crackel. Then add the chillies and onions and sauté for a few minutes. Add this sautéed mixture to the idli batter and mix well. Heat the Kuli Paniyaram Chatti and add little oil in each hole and pour 1 spoon of batter in each hole. Cook them on both the sides. Serve Kuli Paniyaram with Onion Chutney

Chilly Fish Gravy- Indo Chinese Recipe



For those who want a different type of fish recipe here is the one.


Ingredients


Bonless fish cubes-1cup
Maida flour-2tbsp
Corn flour-2tbsp
Salt and pepper to taste
Onions finely chopped-1cup
Green chillies finely chopped-2
Garlic cloves finely chopped-6
Ginger-1"minced
Soy sauce-1tsp
Green Chilly sauce-1tsp
Ajinomoto a pinch
Oil to fry

Method
Make a thin batter out of Maida flour, Corn flour, pepper, salt and water. Dip the fish cubes in the above batter and fry until golden brown in hot oil, Keep aside. Heat oil in a pan add ginger, garlic, green chillies and onions. Saute well. Add soy sauce, chilli sauce, ajinomoto, salt and pepper. Add few drops of water and fry for few more mins untill sauce cooked. Finally add fried fish cubes and mix until all the cubes are coated with chilly sauce.

Fish Fry





Ingredients


Boneless Fish slices-4

Chilly powder-2tsp
Cumin powder-1tsp
Garam masala-1/2tsp
Amchoor powder-pinch
Lime juice-2-3drops
Salt to taste
Oil to fry

Method
Make thick paste out of chilly powder, cumin powder, garam masala, amchoor powder, lime juice, salt and water. Marinate the fish pieces in the above mixture for 3 hours and shallow fry in hot oil till golden brown.

Stuffed Omelette/ Spanish Omelette





This is an breakfast special, A slice of stuffed omelette with glass of milk makes the morning light and nourishing

Ingredients
Eggs-4
Carrot-1(chopped)
Peas-1/2cup
Beans-10(chopped)
Mushrooms sliced-1/2cup
Chilly flakes-2tsp
Pepper and Salt to taste
Olive oil-3tbsp

Method
Heat 2tbsp of oil in pan, Saute the above vegetables for 2 mins and season with chilly flakes, pepper and salt. Allow to cool. In a deep bowl beat the eggs, add the sauted vegetables and mix well. Heat 1tbsp oil in a pan add the egg mixture and cook on both sides till golden brown

Crispy Breaded Okra/ Crunchy Ladiesfinger


If your kids hate to eat okra, Try this. Its like nuggets kids would love it!



Ingredients
Okra-10 (Chop into thick slices)
Maida flour-5tbsp
Pepper- 2tsp
Salt to taste
bread crumbs- 1/2cup
Oil to fry

Method
Take a bowl, add maida, pepper, salt and little water mix into thick batter. Dip the okra slices into the batter and coat with bread crumbs. Deep fry the okra slices in hot oil till golden brown.Serve with Tomato sauce and Ranch.
